It's all about the roux and 'smothering' in this creole cooking class. Learn how to make a classic Étouffée with a chef calling into your kitchen, live from New Orleans

If you only want to learn one dish from the south, this could be it.  (Although we’re pretty certain once you try this class, you’ll make your way through every NOLA dish!)  This dish combines all the pieces that make up the heart of Southern cooking: seafood, a roux, the "Holy Trinity" (onion, celery and green pepper), Cajun seasoning and hot sauce. Bring. It. On. 


The literal translation of this dish is “smothering” and it’s actually one of the techniques you’ll be using to make this mouthwatering meal. The origin of the Étouffée dates back to the 1920’s and was made with crawfish, but it didn’t start to gain popularity until the 1950’s when it made its way to the menu of the restaurants in Breaux Bridge, Louisiana, and then again in the 80’s when it finally reached Bourbon Street. While there is debate about which spices and ingredients make up a “true” Étouffée, what there is no debate about is the taste. When those spices start to simmer, and the scents start wafting through your kitchen, you know it’s going to be good.

New Orleans native Chef Gason is a two-time James Beard Scholar. Chef Gason’s extraordinary culinary skills have taken him around the world to cook for those with the most discriminating tastes including the Francis Ford Coppola, the Kardashians, Dwayne ‘The Rock’ Johnson, Matthew McConaughey, Swiss Beats, Sinbad, Jairus Byrd, Paul Walker, Reggie Bush, and New Orleans Saints’ tight end, Ben Watson.

He’s been featured in Sports Illustrated, Business Insider, Readers Diegest, New Orleans Magazine, morning shows, and on the Food Network show, “Chopped”, making it all the way to the final round.  In 2017 and 2020 he was voted one of the "Best Chefs in Louisiana" by the American Culinary Federation, Louisiana Chapter.

His passion for food and his hometown comes out in the smallest details.  As Chef Gason says, "The state of being fully immersed into an activity is called ‘flow’.  Flow is my culinary code.”  And flow is what you'll learn from him, without a doubt.
