Rarely in modern culture do we see a new dish become so quickly associated with a country, but enter the gorgeous Basque Burnt Cheesecake. It's rapid rise in popularity may be attributed to several things, none more important than the airy, creamy and caramelized flavour of this NY Cheesecake cousin. Invented in Basque country in the 1990's at La Viña Restaurant in San Sebastian, it wasn't until the 2000's that it become a viral success in Spain. Later it took over internet being named in "Food Trends of the Year" by NY Times.
