Master the Monday tradition of down-home cooking with Red Beans, Greens and Pralines

Mondays are for Red Beans and Rice. It's a staple in New Orleans, but may seem unusual to anyone else.  The beautiful story here brings us to laundry day. Yes, laundry day!  Mondays were typically laundry day in the south, which meant there was little time for a complicated dinner. Red Beans and Rice with hearty, sweet and smoky Greens was filling, delicious and let you set it and forget it.  Plus, it used up the leftover meat from Sunday dinner. True comfort food, Red Beans, Rice and Greens is a meal you miss when you leave the American South. 


But not to be missed in this Southern cooking class are the melt-in-your-mouth Pralines, served while still warm from the oven. Introduced to New Orleans by French settlers, this sweet treat has become ubiquitous in the region. The original version called for using almonds, but the Southerners made this precious candy their own by using local pecans. The rest is now history.

New Orleans native Chef Gason is a two-time James Beard Scholar. Chef Gason’s extraordinary culinary skills have taken him around the world to cook for those with the most discriminating tastes including the Francis Ford Coppola, the Kardashians, Dwayne ‘The Rock’ Johnson, Matthew McConaughey, Swiss Beats, Sinbad, Jairus Byrd, Paul Walker, Reggie Bush, and New Orleans Saints’ tight end, Ben Watson.

He’s been featured in Sports Illustrated, Business Insider, Readers Diegest, New Orleans Magazine, morning shows, and on the Food Network show, “Chopped”, making it all the way to the final round.  In 2017 and 2020 he was voted one of the "Best Chefs in Louisiana" by the American Culinary Federation, Louisiana Chapter.

His passion for food and his hometown comes out in the smallest details.  As Chef Gason says, "The state of being fully immersed into an activity is called ‘flow’.  Flow is my culinary code.”  And flow is what you'll learn from him, without a doubt.

*The base price of most classes is $369 which allows 2 participants in the same kitchen. Each additional person in your kitchen thereafter is an additional $50 USD.
