Learn how to master the emerald tresures from the Liguria region of Italy. This stunning coastline is home to the five colorful fishing villages of Cinque Terre. In each of the villages, you will find quaint shops, winding streets and smell the freshness and briney sea air.
In this vegetarian cooking class, you'll learn how to make three Ligurean classics. First, you'll start your class with dough making. This simple but oh-so-delightful dough will create two masterpieces - traditional focaccia that you often think about - crunchy, crispy but soft and salty bread. And the second... the legendary Focaccia di Recco. Little known outside Italy, this thin cheese stuffed focaccia will be a new favorite.
While your focaccia is becoming magic, you'll move on to your Pesto Genovese. Fresh, bright and herbaceous - pesto genovese is the flavor of summer. This pesto, we have heard from a huge group of clients, is the best pesto you will have ever tasted. This green treasure will be the base sauce for your Pesto Pasta Genovese, the typical Ligurian dish found on nearly every restaurant menu in the region. Trofie shaped pasta nestled with potato and green beans makes for the perfect canvas for your emerald beauty to shine.

Born and raised in Brindisi, Puglia Chef Massimo Mancarella discovered his passion for food while watching his grandmother Anna prepare the classic Sunday family lunch. After learning the basic techniques of Italian cuisine at the hospitality institute in his city, Massimo had the opportunity to travel the world. He’s perfected his craft with over 10 years working as a Chef in Egypt, the Netherlands and Spain which have contributed to his love of culture, people and his culinary knowledge.
Chef Massimo’s desire to deeply explore the history and culture of Italian cuisine led him to the prestigious ALMA University. ALMA University, located in the prized culinary region of Parma, Italy houses Italy's most elite culinary professions. It was there where he developed the deepest knowledge, learned the stories and the soul of Italian cuisine. After working in several Michelin Star restaurants, Massimo returned to his homeland, Puglia where he currently works as a private Chef for events and in luxury villas.
“Fill the head before the stomach” is his culinary philosophy: A dish, an ingredient and a recipe almost always have a story to tell. It’s the anecdote and legend that we together will carry together.

*The base price of most classes is $369 which allows 2 participants in the same kitchen. Each additional person in your kitchen thereafter is an additional $50 USD.
