Master working with eggplant in this fabulous cooking experience that celebrates Sicily

Food tells a story of history, culture and tradition, and Sicily is one of the shining examples of tracing history and food. The largest island in the Mediterranean Sea also has a fascinating past which can be savoured in its cuisine. Even today, if you ask a person in Sicily about their heritage - they will answer Sicilian, not Italian. While the food of this island has much in common with the rest of Italy, there's a noticeable difference with Greek, Spanish and Arab influence. As you tour around the island and explore the chaotic markets in Palermo and Catania, you'll see heaps of locally grown produce - eggplant, zucchini, olives, capers and legumes like chickpeas - all made possible by fertile volcanic soil. You'll see an abundance of citrus fruit and unique fruits including the native blood orange, Tarroco, that can't be exported and are only found on this island. You'll see loads of nuts and dried fruits that nod to their Arab influence.

This Sicilian cooking class pays tribute to some of this destinations most famous dishes.  First, you'll start with the loved Pasta alla Norma.  This simple dish is technically challenging with a lesson in perfectly fried eggplant. Then you'll explore sweet and salty Caponata. Eggplant, peppers, olives, raisins and pine nuts come together in a side dish or appetizer that embodies the spirit of this island. Finally, you'll explore another island off the coast of Sicily - Pantelleria. This delightful place, part of the Strait of Sicily, is only 60 kilometers from Tunisia. A simple salad of potatoes, tomatoes and olives - the fresh flavors, we believe, will become one of your summer staples.

Chef Massimo

Chef Massimo

Brindisi, Italy

Chef at restaurants throughout the world. Graduate of ALMA University.

Born and raised in Brindisi, Puglia Chef Massimo Mancarella discovered his passion for food while watching his grandmother Anna prepare the classic Sunday family lunch. After learning the basic techniques of Italian cuisine at the hospitality institute in his city, Massimo had the opportunity to travel the world. He’s perfected his craft with over 10 years working as a Chef in Egypt, the Netherlands and Spain which have contributed to his love of culture, people and his culinary knowledge.

Chef Massimo’s desire to deeply explore the history and culture of Italian cuisine led him to the prestigious ALMA University. ALMA University, located in the prized culinary region of Parma, Italy houses Italy's most elite culinary professions. It was there where he developed the deepest knowledge, learned the stories and the soul of Italian cuisine. After working in several Michelin Star restaurants, Massimo returned to his homeland, Puglia where he currently works as a private Chef for events and in luxury villas.

“Fill the head before the stomach” is his culinary philosophy: A dish, an ingredient and a recipe almost always have a story to tell. It’s the anecdote and legend that we together will carry together.

What an amazing experience! Through a little online research, I found The Chef and The Dish for my foodie husband’s 50th birthday. There are so many delicious courses offered. He decided on the pasta making class with Ravioli and Tortellini. The first step was a prep class the weekend before with the Kitchen Assistant. She went over the ingredient list, tools needed, made sure our Skype was working, and asked a lot of questions about our background… See More

The Chef & The Dish fell nothing short of phenomenal. Such a personal and authentic experience! Chef Carlotta, our lovely guide, showed us around Naples in such a beautiful way! We couldn’t have asked for a better teacher. The food was outstanding, as was the wine and the company. Absolutely recommend this for anyone who loves good food and having fun in the kitchen. It made us beginners feel like total professionals. We will keep this with us forever!

We spent a wonderful afternoon in Sicily with Chef Carlotta. She is amazing….. warm, welcoming, knowledgeable, creative….and patient! This was a birthday present from my sister in Atlanta. My daughter and I cooked together here in Colorado and our husbands and grandson were our sous-chefs. It was so much fun! We prepared three amazing dishes and enjoyed a most wonderful “banchetto” at the end of our class. Deliziosa! From start to finish, our experience with The Chef and The Dish was fantastic and seamless!
