Learn how to make Phyllo dough from scratch, then turn it into a Turkish borek in this fun dough making class!

A Turkish table is incomplete without borek… Warm, crispy baked pastry, filled with fresh herbs, seasonal greens and cheese.  A recipe that goes so far back in time, there is debate as to where it originates.  But one thing is true, this recipe has stood the test of time and been passed through hands, cultures and borders.  In this class, you'll transport to the ancient world to Halikarnasus where one of the seven wonders of the world was "Mouseleum", today in Bodrum, Turkey, where eating herbs and olive oil is still the lifestyle.

While many rely on store-bought phyllo to bake this delicious savoury pie, in this class you’ll learn how to make a simple phyllo dough using your hands.  You’ll move on to mixing a delicious and fresh filling, full of seasonal herbs, greens and cheese - exactly how it’s always been done - and gently fry on your stovetop.  You’ll round out the meal with simply prepared vegetables topped with Magic Sauce.  And there is definitely a reason why it’s called “Magic Sauce”! In your cooking class, you'll learn why. Get ready to transport your kitchen to the beautiful Bodrum, Turkey with this wonderfully delicious and comforting meal that will have you making your own Borek from scratch.

My Niece and I took Chef Asli's Turkish Kebabs class. Chef Asli was so knowledgeable and patient. I have actually made kefta kabob a lot at home, and have struggled to improve the texture of both ground lamb and ground beef. I've tried most things: adding baking sode, adding a panade, grating and onion and dehydrating it. When I mentioned this to Chef Asli, her advice was so simple to implement (and unexpected). The result was succulent, tender kebab with not hint of meatball…

We had the pleasure of cooking with Chef Asli from Turkey yesterday. We made delicious Kebabs with a mixture of lamb and beef (and other ingredients), as well as a bulgur wheat salad, and a rice pilaf. We invited guests to share the meal with us, ad all of us really enjoyed it! Chef Asli is very personable, and extremely knowledgeable about her country and the regional foods.

We had a wonderful cooking class with Chef Asli Mutlu this weekend! Chef Asli is so knowledgeable and kind - we learned a ton, laughed a lot, and made a delicious meal! Our Kitchen Prep Assistant was also incredibly helpful, and made sure we had all of our ingredients and were ready for our class. The Chef & The Dish is a well-oiled machine - I highly recommend.
