Learn how to make the much-loved Cacio e Pepe and a delightful savory pie in a private cooking class that will transport you to Rome for the day

As most things invented in Rome, the history goes so far back it makes everything next to it seem like a shiny new penny. The main dish in this class is no exception. Cacio e Pepe, literally translating to "cheese and pepper" is exactly that - cheese, pepper and extremely ancient. It's believed this could be the oldest Roman pasta dish.  With just three simple ingredients, all with records dating back more than 4,000 years, it would make sense for that to be true.

Roman shepherds are believed to be the inventors of Cacio e Pepe. Shepherds would spend months away from home and needed to carry with them ingredients that wouldn't spoil. In comes pepper, aged cheese and dried pasta. The rest, as they say, is history. This class will teach you the fundamentals of what has become one of the most loved Italian pastas. As it is often said, simple ingredients, but the lesson is in the tricky technique.

But first - the pie. In this cooking class, you'll start your experience learning a how to make pastry dough with an unusual ingredient - wine. You'll turn that into a fabulous escarole pie. Accompanied by a simple sauteed chicory, this class is a fun way to eat your cheese and have your pie, too.  Enjoy time with a chef, video calling you live from Italy. My husband bought me the Ravioli class for my birthday in September so I thought it would be fun for us to do the class on his birthday today! From the moment Carlotta came on the screen we knew we were in good hands! She was organized, laid back, encouraging and so much fun to cook with. My husband and I took the class seriously because we love to cook and really wanted to learn. Everything came out incredible! So much so that my mother and brother came over after and we tau… See More

What an amazing experience! Through a little online research, I found The Chef and The Dish for my foodie husband’s 50th birthday. There are so many delicious courses offered. He decided on the pasta making class with Ravioli and Tortellini. The first step was a prep class the weekend before with the Kitchen Assistant. She went over the ingredient list, tools needed, made sure our Skype was working, and asked a lot of questions about our background… See More

We had such a fun and engaging experience making ravioli and tortellini with Chef Carlotta this weekend. She was amazing - instructive, clear, fun and it was a riot to be taking directions in my own kitchen! The recipes were great and the pasta turned out so delicious we wanted to eat it all up at once! We had so many laughs and it was truly a memorable way to spend a Sunday. Delicious! Thanks for such a fun time !!!

An absolutely wonderful experience! Our daughter gave us a gift certificate for a session with The Chef & The Dish and we chose an Italian Cuisine with Chef Carlotta. She was a delight with the ability to share her expertise and love of cooking while making our time with her informative, so enjoyable and inspiring for my husband and myself. This Was a great gift for us and I recommend The Chef & The Dish to everyone.
