Join us for a virtual trip to Peru to learn how to make Pan con Pejerrey, Peru’s iconic fish sandwich! Chef Lucia will join you, live from her home kitchen in Peru, for this fun and interactive cooking class that will get you hooked (ha, get it?) on cooking with fish at home. From selecting and handling fresh seafood to achieving the perfect light, crispy fry, you’ll explore the cultural history of Pan con Pejerrey, one of the world's most loved sandwiches. Most commonly eaten for breakfast, Pan con Pejerrey is often called a poor man’s delicacy, an inexpensive yet deeply flavorful and nutritious meal that reflects Peru’s coastal food traditions.
Throughout your cooking class, you’ll explore the cultural history of the simple yet bold costal flavors of Pan con Pejerre. You’ll also learn how to make homemade mayonnaise from scratch and prepare classic sarsa criolla, the bright onion relish that completes this legendary sandwich. By the end of the class, you’ll not only know how to recreate this famous Peruvian fish sandwich at home, but you’ll also walk away with confidence, technique, and a better understanding of how to cook fish simply, affordably, and deliciously.

Chef, Consultant and Peruvian Culinary Expert, recently consulted for one of Latin America's 50 Best Restaurants
Lucia loves nothing more than her family, scuba diving, Peru, traveling, and, of course, cooking. Lucia's culinary journey started at the age of 12 (when she helped at the family restaurant), and since she has worked as a restaurant consultant, menu developer, customer service advisor, and caterer, and managed events for corporate clients and celebrities. Most recently, she acted as a consultant for a restaurant that landed on the prestigious “50 Best Restaurants of Latin America” list.
As a graduate of Le Cordon Bleu in Lima, Lucia pursued her love of food, travel, and cooking. She opened her own cooking class and experience company working in both Lima and Cusco City. In addition to her long list of accolades, she has spent much of her life traveling - with more than 50 countries under her belt, she’s visited five continents and has traveled more than 70% of her home country of Peru. During her travels, she seeks out the local traditions and food to understand the country’s culture and history.
Now, she gives specialty gastronomic tours and experiences, consults restaurants, and runs a business that offers private chef services. She can’t wait to bring a little Peru into your kitchen in her cooking classes with The Chef & The Dish.

PRIVATE CLASS
*The base price of most classes is $369 which allows 2 participants in the same kitchen. Each additional person in your kitchen thereafter is an additional $50 USD.
