Learn the authentic dishes from one of the world's most important food regions, Emilia-Romagna

The Emilia-Romagna region of Italy is often prized by Italians as the most important gastronomic treasure of the country. It's here where you'll find the production of Parmigiano Reggiano, Aceto Balsamico Tradizionale, Prosciutto di Parma, Ragu (known more commonly in North America as Bolognese sauce) and lots, lots more.


In this private virtual cooking class, you will learn the authentic dishes of this food-lovers region. The main star is pork. Pork is an important part of the culinary tradition in this region of Italy, and Arista alla Reggiana is a tradition found across homes on Sunday.  Together with your chef, video calling you live from Italy, you'll master a succulent pork swimming in a rich sauce of cream, garlic and rosemary. It will be a delight to your senses and is one of our most surprising dishes amongst all of The Chef & The Dish cooking classes.  


To round out your meal, you'll enjoy your main with a simple side of roasted potatoes and fennel and for dessert - the famous Torta Barozzi. Torta Barozzi is a prized recipe shrouded in secrecy since 1886. This gluten free cake is filled with rich espresso, chocolate and peanuts and is a truly decadent way to end your meal.

Chef at restaurants throughout the world. Graduate of ALMA University.

Born and raised in Brindisi, Puglia Chef Massimo Mancarella discovered his passion for food while watching his grandmother Anna prepare the classic Sunday family lunch. After learning the basic techniques of Italian cuisine at the hospitality institute in his city, Massimo had the opportunity to travel the world. He’s perfected his craft with over 10 years working as a Chef in Egypt, the Netherlands and Spain which have contributed to his love of culture, people and his culinary knowledge.


Chef Massimo’s desire to deeply explore the history and culture of Italian cuisine led him to the prestigious ALMA University. ALMA University, located in the prized culinary region of Parma, Italy houses Italy's most elite culinary professions. It was there where he developed the deepest knowledge, learned the stories and the soul of Italian cuisine. After working in several Michelin Star restaurants, Massimo returned to his homeland, Puglia where he currently works as a private Chef for events and in luxury villas.


“Fill the head before the stomach” is his culinary philosophy: A dish, an ingredient and a recipe almost always have a story to tell. It’s the anecdote and legend that we together will carry together.

*The base price of most classes is $369 which allows 2 participants in the same kitchen. Each additional person in your kitchen thereafter is an additional $50 USD.
