Make Turkish pastries anytime! Learn how to work with Phyllo dough in this Turkish pastries cooking class (which includes quick baklava!)

Though they go by several names in the Middle East, in Turkey they are called Böreks. Böreks are a family of savory pastries found in this region, and while the term Börek is still relatively unknown in North America, once you have one you'll never go back. These flakey pastries are irresistible. In this class, you'll learn how to work with the principle ingredient - phyllo dough. And once you see how easy it is, you'll be making böreks for every large gathering. 


It's believed Phyllo (also referenced as filo) dough originated in Medieval Turkey in the 11th century. Phyllo was made from scratch in most homes, as it is still today, although less often with modern conveniences and busyiness. If you're interested, be sure to check out our Phyllo from Scratch class! Today of course, phyllo dough is available worldwide in the freezer section, meaning anyone can use this dough to create quick boreks at home. Phyllo has a reputation however, that it can be finicky or labor intensive. This class will remove that barrier and phyllo will become a regular part of your culinary adventures. 


In this Turkish cooking class, Chef Asli will video call into your home, live from Bodrum, Turkey. Together, you'll make three fabulous dishes using phyllo dough in different ways - each teaching a new lesson in how to work with this paper thin dough. Share stories, have some laughs and at the end - you'll have a Cheese and Herb Börek, a Meat Börek and a quick Baklava that will have you wishing you made more. This class is essential for anyone who loves to entertain.

Asli, founder of Bodrum Cooking Class, is a former travel executive. She comes from a family of tutors her great grandfather was a physics teacher and her grandfather was a Professor in Economics, her father still teaches at the naval accademy and she herself was a part time teacher at a University in Istanbul, she says “teaching is in my genes.” As a child, she spent time in U.S. and Belgium due to her father's job. After returning to Turkey and a long career in Istanbul running a travel company and a hotel she changed her life to become a chef in Bodrum. An avid recipe and story collector from all parts of Turkey and abroad she has made a life for her and her husband in the gorgeous countryside of Bodrum, Turkey sharing her love of  Turkish Cuisine to the world as much as she can. She is the co-founder of SlowFood Bodrum convivium and is trying to save ancient recipes in the area with her fellow members.

Asli also does a cookery and life style program on a local TV channel every week. Her program focuses on local recipes, fresh ingredients and is trying to support local farmers by creating awareness. She has been on many TV shows all over the world including Shane Delia's Spice Journey in Australia, "WDR Wunderschön" in Germany,  Luxury List for CNBC World all feauturing Turkish Cuisine.  Skype Chef Asli into your home, and learn a whole new world of Mediterranean cuisine.

My Niece and I took Chef Asli's Turkish Kebabs class. Chef Asli was so knowledgeable and patient. I have actually made kefta kabob a lot at home, and have struggled to improve the texture of both ground lamb and ground beef. I've tried most things: adding baking sode, adding a panade, grating and onion and dehydrating it. When I mentioned this to Chef Asli, her advice was so simple to implement (and unexpected).
