Chef Andres comes from a long line of culinary experts, being the third generation of caterers in his family. His exposure to the food world began at an early age, and after working his way up from washing dishes to the kitchen, he discovered his passion for cooking. At 17, he pursued his studies in France at Lycée Hotelier Jean Baptiste Simeón-Chardin. After completing his studies, he returned to Mexico and graduated from the Culinary Institute of Mexico (ICUM).
Throughout his career, Chef Andres has worked alongside some of the top chefs in Mexico, honing his skills under their mentorship. In 2015, he joined the prestigious Gary Danko restaurant team in San Francisco, where he managed various roles in the kitchen. Upon returning to Mexico, he founded Cocina Colmillo, offering pop-up dinners and restaurant consulting services.

Fun Fact: I cater in the Bajío région from 2 up to 4,000 people. You'll meet my cat Cléo, who always pops into the class (especially when I shred chicken for Chicken Tinga or Enchiladas Mineras). I love music and if we get into a conversation about it, I can chat with you for hours about the best musicians!
